Oat Squares

3 cups of oats
7/8 cup of melted butter
1 cup brown sugar
1 tsp of baking powder
1 dash of salt

Preheat over to 275 - 300 Fahrenheit.

Mix oats, sugar, salt and baking powder. Melt butter and pour over the mix. Blend together and pat into a 8 x 12 inch pan. Bake until golden brown. Cut into squares while still hot.

Here's a tip. If you use the recipe exactly as above, you will get crunchy oat squares. If you add more butter, you will get the chewy oat square most people tasted last night. But don't use more than 1 cup or they will literally drip butter.

Gingerbread Cookie

Greetings. I have a gingerbread cookie I have been using for over 30 years. Everyone loves them and I used them in a Samhain ritual two years ago myself. I read somewhere that country folk in olden times used gingerbread men to pass on love spells.

Ingredients

3/4 cup shortening
1 cup sugar
1 egg, unbeaten
1/4 cup molasses
2 cups sifted flour
1 + 1/2 tsp soda
1 tsp each cloves, cinnamon and ginger
1/2 cup granulated sugar

Cream shortening; add sugar gradually and cream thoroughly. Add unbeaten egg and molasses and beat until smooth. Sift remaining dry ingredients into creamed mixture and stir until thoroughly mixed. Chill overnight or a few hours to handle more easily. Roll out on floured surface and cut out cookies. Bake on ungreased cookie sheet for 16 minutes in 350% oven.

Be watchful that they don't burn as they are full of molasses.

Natural Candy

1 cup organic natural peanut butter
1/4 cup carob powder
1/4 cup mashed organic banana
2 tbsp pure vanilla extract

Mash the banana, adding the vanilla and carob powder in, and blend well. Add the peanut butter. Shape into balls and roll in cinnamon. Store in refrigerator.

Here's the recipe for the Honey dates, if Lynn wants it. She said she liked them.

Rose-Honey Dates

6 - 10 Majolica dates (large with pits - unprocessed)
1/2 cup honey
2 tbsp lemon juice
1/4 cup rosewater

Cook over very low heat for 20 - 30 minutes, till dates are very soft. Cool slightly before serving. *Note: do not use pitted dates, as they will dissolve into the liquid.
